I originally made the plain soup as a meal prep. This picture is of a reheated portion that had been in the freezer. To make the soup, I started by sautéing onion and garlic in olive oil and a pinch of salt. I added chunks of butternut pumpkin to the pot, sprinkled in an approximate amount of rinsed red lentils and finally poured in a basic vegetable stock. Then the soup simmered until ready.
I reheated it in a pan because that is where I seared the seitan. But, of course, you would initially cook the soup in a pot. I also added the frozen spinach near the end of this process. So it didn’t overcook. This combination felt chunky enough and thickened as it heated. It could be treated as a soup or you could change the water content to use it as a sauce. I seasoned it with a pinch of salt and lots of pepper.
