Baked beans: from basic to brilliant

One of the laziest fancy breakfasts can start with a can of baked beans. This breaky can be more nourishing and diverse than the stereotype. Get creatively lazy with these hacks for baked beans.

We usually begin with an ordinary can of baked beans. If you want to do everything from scratch, you could make your own baked beans. Get some white beans, passata and seasonings. But if you feel busy or like a good shortcut, you’re likely to open a tin of the stuff. That’s just the start. It can get interesting in just minutes.

I have tried both. Baked beans from scratch and also from a can. In some locations, I can’t find the right type of white beans to really make it feel authentic. I have soaked and boiled white beans to make a hot breakfast. I end up with a huge batch of food just for myself. It’s a bit too much. When done carefully, tinned beans can be alright.

I look for organic BPA-free baked beans. It is the best way to avoid unnecessary additives. Then it’s not too bad. I’ll save the from-scratch version for a quiet weekend. On a day when there’s other stuff to do, try this.

Mushrooms will add texture. They take a bit of time. Just let them sit on a non-stick pan, maybe with a bit of olive oil. Stir them around occasionally. Put some pressure on those mushies (press them with the spoon) so they cook more. That’s the most involved step in this breaky. And it’s quite optional, really.

In this picture, I used frozen spinach because I ran out of fresh spinach. But we should aim for the fresh version of veggies whenever possible. Spinach is pretty straight forward. Mix it through and it should wilt. Cool.

The ideal bread would be a wholemeal sourdough. Organic would be pretty good. Toast your bread how you want. I often use a grill because it’s available. I would enjoy a clean grill pan for toast. But, in a hurry, you’re probably going to use a toaster. To be normal.

Here’s one of the quickest ways to elevate an everyday meal - add cashew cheese. I’m such a fan of the creamy goodness. My favourites are from Nutty Bay and Fine Cultures.

When I remember, I would sprinkle hemp seeds on my hot breakfast and crack some pepper. That’s such a personal preference.
