Healthy treats on a sunny weekend

Australia got some hot weather near the end of January. This is a wonderful time for high-protein meals and healthy sugar-free desserts to get us through these days.

Pancake Sandwich

This is a convenient version of the traditional pancake stack - ready to eat when they are hot or cold, at home or on the go. Make sugar-free jam by melting frozen berries with chia seeds. Stack healthy pancakes containing only ripe banana, oat flour and soy milk. Maybe include wholemeal wheat flour if desired.

Nice Cream

Create a homemade healthy ice cream in a high-speed blender or Thermomix. Combine frozen ripe bananas, creamy soy milk (such as Calci-Plus) and cacao. You can add extras like supplement powders and toppings.

Sweet Sorbet

This is too easy. I just blended frozen mixed berries (mine were from the supermarket, but you can order berries at Doorstep organics) at a low speed. That is the only ingredient. This was a delicious dessert at the end of a hot day.

Scrambled Tofu in Balsamic Vinegar

Crumble and cook some tofu in your favourite breakfast veggies. Enjoy it on toast or in a wrap. I seasoned tofu scramble with a pinch of salt, a sprinkle of cumin and garlic powder, and then a splash of balsamic vinegar. I cooked garlic and onion in olive oil, added the tofu and veggies, and then also stirred through some tomato paste.
