How to make burgers from leftover meals

Turn your old meal-prepped batches and leftovers into burgers when you get bored of the same textures.

First-Step Ingredients

Start with the extras that need to go into both of these flavours. Get some ground linseed, oats and dark leafy greens. I prefer spinach and kale.

Blend these ingredients or mash them in a bowl.

Second Step: Flavours for Burgers

Mexican

Get a Mexican bean mix and some rice. Brown is better. White could be ok, especially when making up for it with whole raw oats and steamed sweet potato. If you have leftover saucy chilli, strain it with a slotted spoon for the burger mix and include extra dry ingredients.

Curry

Turn your bean or lentil curry a bit more chunky. You could also make burgers from hearty pumpkin or sweet potato curries. Either strain the sauce or add more veg. Mix this with plenty of dry ingredients and all of the first-step foods in this guide. You could also bulk out your burger patties with white or golden mashed potato.

Italian

Use leftover pasta sauce to flavour burgers that are made from mushrooms, vegetables and textured vegetable protein. You could also include white beans.
