Healthy easy treats to make with frozen fruit

Frozen fruit is useful in its own right, even if fresh produce is preferred. Store-bought options should be frozen when fresh. It also tends to be cheaper. If you have spare fresh fruit and need to use it up, rinse and freeze it. Everyone should freeze their own ripe banana to use in smoothies and homemade sugar-free ice creams. Whether you’re saving money by shopping in the freezer section, or preventing waste by freezing your excess fruit, you can create delicious treats at home with these foods.

Classic traditional porridge

This one is pretty self-explanatory. Mix frozen berries into porridge (oatmeal). Add cacao for a choc berry taste. Delicious! It feels like dessert for breakfast. It also should be jam packed with antioxidants. Such a comfortable way to start the week.

Baked porridge or oat cake

I love making baked porridge because it is a quick lazy delicious dessert. It is also a nourishing warm treat, perfect on a cool night. I will pour soy milk, oats, frozen fruit and linseed into a deep baking tray. Think of the trays you would use for a roast. I guess you could make a smaller cake size with adjusted proportions.

Muffins

Add frozen berries into your favourite homemade muffin recipe. Try making a batch of fully plant based muffins. I bet it’s easier than you expected. Blueberries would be perfect for this!

Pancakes

Plant based pancakes are simple to make. Blend up dairy-free milk (soy or other), oats, ripe banana and some ground linseed. I would stir frozen blueberries into the batter after it has been blended. Alternatively, you could blend it through to make blue-coloured pancakes.

Topping or compotte

Heat frozen berries and add them atop a cooked dessert. It’s that simple. I like to slowly ‘melt’ frozen berries in a pot with a splash of water until they are more of a sauce. It’s the ideal topping for pancakes and more.

Sorbet

Blend a splash of fruit juice with frozen fruit. Add just enough liquid to get a vortex. This method works best with a high speed blender or Thermomix. This version of sorbet is great for kids or health-conscious people of any age. It’s a bit of fun.

Nice cream or smoothie bowl

Blend your frozen fruit with a splash of plant based milk. Add small amounts of liquid at a time, until you get the preferred consistency. Mix in small extras like micro-greens and superfood seeds if you have them.
